Ham Scalloped Potatoes (Non-Dairy)

I have loved scalloped potatoes since I was a kid. But when Monte became lactose-intolerant, I couldn’t make them anymore. Until I found this recipe that uses a white sauce that doesn’t use any milk or cream! Even Gem likes this recipe.

It’s good with or without onions (Monte can’t eat those, either.) Add ham and this side dish becomes a main dish. Sometimes I add cream of celery soup. And if Monte isn’t going to be home to eat it, I add shredded cheese. Delish!

Ingredients

  • 5 cups raw potatoes, peeled & sliced
  • ¾ cup onion, chopped optional
  • 2 cups ham optional
  • 4 tbl butter or margarine
  • ¼ cup flour
  • cups chicken broth
  • 2 tbl mayonnaise
  • 2 cloves garlic, minced or pressed
  • ¼ tsp poultry seasoning
  • tsp black pepper
  • 1 tbl chives

Directions

  • Preheat oven to 375°F /165°C.
  • Layer potatoes, onions, and ham in greased 2½-quart baking dish.
  • Melt the butter in a saucepan over medium heat. Add the garlic, and saute until fragrant; about 30 seconds.
  • Add flour all at once and stir quickly to prevent clumping. Slowly add the chicken broth, stirring constantly.
  • Add remaining ingredients. Cook and stir until thick and bubbly.
  • Pour sauce over potatoes. Cover with a lid or aluminum foil. Bake for 1 hour, or until potatoes are tender.
  • Note: For faster baking, cook in a microwave about 30 minutes.
