Veggie Salsa

The original recipe came from a 2004 advertisement for Mrs. Dash seasoning. I adapted it for us, omitting the onion, adding tomatoes, and doubling the amount because Monte absolutely loves it! And because I haven’t bought Mrs. Dash in years, I substitute black pepper and garlic powder. 😊
This is a great accompaniment for fish. I always serve it with pan-fried tilapia, which is the fish we eat the most, but it also works well with salmon, cod, halibut, orange roughy, etc.
I use a chopper to make cutting the peppers and tomatoes quick and easy.
Veggie Salsa
A simple blend of tomatoes, peppers, and corn provide the perfect accompaniment for fish.
Servings 4
Ingredients
- 2 large bell peppers, diced about 2 – 2½ cups
- 2 large tomatoes, diced about 2 – 2½ cups
- 1 can (15 oz) sweet corn or about 1½ – 2 cups fresh sweet corn
- 1 tbl olive oil
- 1 tbl lime juice
- 2 tbl honey
- 1 tsp black pepper or to taste
- 1 tsp garlic powder or to taste
Optional
- 1 cup red onion, diced
Directions
- Mix all ingredients in 2 quart bowl. Serve with fish and rice.
