Mix cake according to directions on the box. Pour batter into cake pan, about ⅔ full. Pour remaining batter (if any) into a smaller pan or cupcakes. Those are just extra.
Bake according to cake box directions. Let cool in pan on wire rack 10 minutes. Carefully remove cake from pan and let cool completely.
Slice cake in half and upend onto cut sides, placing the flat bottoms side-by-side. Frost between the two halves and press together.
Cut out a notch: At the off-center mark, make a vertical cut about ⅓ of the way through the cake. Next, make an angled cut a couple inches further down, intersecting with the first cut.
Carefully remove this notch. Separate the two pieces of the notch and use one for the bunny tail, frosting it so it stays in place.
Frost entire cake.
Cover entire cake with coconut, patting the flakes onto the frosting. Use jelly beans or gumdrops for the eyes and nose.
Cut ears out of pink construction paper. Click for traceable pattern. Cover bottom ends with plastic wrap before sticking them into the notch.
To make green coconut grass, place 1/2 cup coconut flakes in a plastic bag. Add 3 drops green food coloring. Seal bag and shake until all the coconut is colored.
Sprinkle green coconut flakes around cake and scatter around more jelly beans.
