Instructions
Preheat oven to 450°F.
Mix cauliflower florets and onions in a 13x9 baking pan. Drizzle olive oil over vegetables and sprinkle with salt. Stir to coat evenly, then spread veggies into a shallow layer.
Roast 15 minutes. Add the cranberries, distributing evenly over the cauliflower. Roast another 15 minutes, or until veggies are tender.
