Green Tomato Bread
My tomatoes were in a race to ripen before the first freeze.
Alas, they were going to lose, so I had to pick them green. What to do with them now?
Fried green tomatoes?
Green tomato pie?
I did a quick search on AllRecipes.com and found this recipe. Delicious!
Green Tomato Bread
When life gives you green tomatoes, make bread!

Ingredients
- cooking spray
- 1 cup finely diced green tomatoes
- 1 cup sugar
- 1 cup walnuts
- ½ cup canola oil
- 1 egg
- 1½ tsp vanilla extract
- ½ tsp salt
- 1½ tsp cinnamon
- ½ tsp baking soda
- ⅛ tsp baking powder
- 1½ cups all-purpose flour
Directions
- Preheat oven to 350°F (175°C). Spray a 9×5-inch loaf pan with cooking spray.
- Combine first seven ingredients in large bowl and mix well. Sprinkle cinnamon, baking soda, and baking powder into bowl and mix again. Lastly mix in the flour until well blended.
- Pour batter into loaf pan.
- Bake 1 hour or until a toothpick inserted in the middle of the loaf comes out clean. Let cool in the pan for about 10 minutes before transferring loaf to wire rack to finish cooling.
