My tomatoes were in a race to ripen before the first freeze.

Alas, they were going to lose, so I had to pick them green. What to do with them now?

Fried green tomatoes?

Green tomato pie?

Green Tomato Bread

When life gives you green tomatoes, make bread!

Ingredients

  • cooking spray
  • 1 cup finely diced green tomatoes
  • 1 cup sugar
  • 1 cup walnuts
  • ½ cup canola oil
  • 1 egg
  • tsp vanilla extract
  • ½ tsp salt
  • tsp cinnamon
  • ½ tsp baking soda
  • tsp baking powder
  • cups all-purpose flour

Directions

  • Preheat oven to 350°F (175°C). Spray a 9×5-inch loaf pan with cooking spray.
  • Combine first seven ingredients in large bowl and mix well. Sprinkle cinnamon, baking soda, and baking powder into bowl and mix again. Lastly mix in the flour until well blended.
  • Pour batter into loaf pan.
  • Bake 1 hour or until a toothpick inserted in the middle of the loaf comes out clean. Let cool in the pan for about 10 minutes before transferring loaf to wire rack to finish cooling.
