Hasselback Roasted Potatoes

Ingredients

  • 4 medium potatoes
  • ¼ cup butter or margarine, melted
  • Dried herbs & spices to taste, such as pepper, sea salt, garlic, oregano, basil, rosemary, tarragon, and parsley. Minced garlic, onion.
  • Other suggested toppings: parmesan cheese, bacon bits, chopped onion, green onion, minced garlic, chives, parsley, shredded cheese, sour cream, ketchup.

Directions

  • Preheat oven to 425°F/218°C.
  • Scrub potatoes clean, leaving skins intact. (Cut off any blemishes.)
  • Place potato between two guides, such as the handles on butter knives. Make thin slices all the way across the potato, but don't slice through the bottom. (This is why using guides is handy–it keeps you from slicing all the way down.)
  • Place potatoes in a foil-covered baking dish, leaving at least ½ inch between them. Use a pastry brush to brush melted butter in the slices and the outside skin.
  • Sprinkle with the herbs of your choice. Put minced garlic or onion in between slices at this time, if desired.
  • Bake 30 minutes. Brush again with remaining butter. Add toppings such as parmesan cheese, bacon bits, or green onion.
  • Bake another 30 minutes or until potatoes are tender inside. Top with any other desired ingredients. Serve with sour cream or ketchup.
