I first learned about using a rosemary/tarragon combination of herbs on roast chicken from Guide to Gourmet Cooking. Love it! I modified that recipe just a bit for roasting Cornish hens.

Roasted Cornish Hen

This diminutive poultry makes for an elegant main dish.

Ingredients

  • 2 Cornish Hens
  • 1 tbl olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried tarragon
  • 1 tsp lemon pepper
  • ¼ – ½ tsp Himalayan Pink Salt, ground or sea salt, or table salt

Directions

  • Preheat oven to 375°F.
  • In a small bowl, combine oil and herbs into a paste.
  • Rub the herb paste onto the Cornish hens and place breast up in a baking dish. Roast in oven until golden brown, about 60 – 75 minutes.
