Pancakes
These flavorful pancakes are light and fluffy.

Ingredients
- 2½ cups flour
- 6 tsp baking powder
- 2 tbl sugar
- 2 cups milk
- 2 large eggs
- 4 tbl oil
Directions
- Preheat skillet on medium. (Nonstick pans work best; don't use any oil.)
- Mix together dry ingredients with a fork.
- In another bowl, lightly beat the eggs with the milk and oil. Pour all at once into the flour mixture.
- Mix with fork or whisk until all the flour is incorporated but tiny lumps remain.
- Pour about ¼ cup batter onto hot pan. Cook 1 – 2 minutes until top is bubbly and bottom is nicely browned. Flip and cook 1 – 2 minutes more.
- Serve with butter and syrup. Makes about 14 4-inch pancakes.
