Roasted Cornish Hens
I first learned about using a rosemary/tarragon combination of herbs on roast chicken from Guide to Gourmet Cooking. Love it! I modified that recipe just a bit for roasting Cornish hens.
Roasted Cornish Hen
This diminutive poultry makes for an elegant main dish.

Ingredients
- 2 Cornish Hens
- 1 tbl olive oil
- 1 tsp dried rosemary
- 1 tsp dried tarragon
- 1 tsp lemon pepper
- ¼ – ½ tsp Himalayan Pink Salt, ground or sea salt, or table salt
Directions
- Preheat oven to 375°F.
- In a small bowl, combine oil and herbs into a paste.
- Rub the herb paste onto the Cornish hens and place breast up in a baking dish. Roast in oven until golden brown, about 60 – 75 minutes.
