These flavorful pancakes are light and fluffy.

Ingredients

  • cups flour
  • 6 tsp baking powder
  • 2 tbl sugar
  • 2 cups milk
  • 2 large eggs
  • 4 tbl oil

Directions

  • Preheat skillet on medium. (Nonstick pans work best; don't use any oil.)
  • Mix together dry ingredients with a fork.
  • In another bowl, lightly beat the eggs with the milk and oil. Pour all at once into the flour mixture.
  • Mix with fork or whisk until all the flour is incorporated but tiny lumps remain.
  • Pour about ¼ cup batter onto hot pan. Cook 1 – 2 minutes until top is bubbly and bottom is nicely browned. Flip and cook 1 – 2 minutes more.
  • Serve with butter and syrup. Makes about 14 4-inch pancakes.
